La carotte|The carrot

Encore une fois, c’est de l’Orient, Iran ou Afghanistan, que nous arrive cette plante si familière. D’abord blanche (carotte de l’est) comme son cousin le panais, ou encore jaune, mauve (carotte de l’ouest). Les Grecs et les Romains l’utilisaient comme plante médicinale, sa chaire étant très coriace et fibreuse. C’est au XVIIe siècle, en Hollande, qu’apparait la carotte orangée, plus charnue et plus goûteuse elle supplante rapidement toutes les autres. Elle est l’ancêtre de toutes les carottes que nous consommons aujourd’hui.
